Follow on civet's excrement coffee is the debut of a new version based on buffalo's dung. Khikwai Coffee begins with feeding buffalo with the pod of Jamjuree (Samanea saman) mixed with molasses to marinate to yield a sweet and sour flavour, along the coffee beans. The coffee beans are digested in the buffalo's stomach for two days before being excreted. Then separate the coffee beans from the dung, rinse them with water, peel the shell and rinse the mucus, let them dry for four months to get the flavour and aroma. Finally, roast them and brewed for sale.
